I noticed in James's great new video, that he had only two hands:

That means that when he was snipping a chair from the raft after jabbing it with the cocktail stick, the raft fell back to the bench.
It's much easier if you fix the raft to something solid with blobs of Blu-Tack. And it's very much easier if that something is tall enough to bring it nearer to eye level.
Here I wish to recommend a new unopened jar of pickled beetroot. 6" tall with a flat lid 3" diameter, and at 710gm + the jar it's heavy enough to stay put on the bench. You can get 3 rafts on top, and just turn the jar round to get at each one as you need them.
The great advantage of a new unopened jar, is that as everyone knows it's next to impossible to remove the lid from a new jar of beetroot. So there is zero chance of accidental spills. And the beetroot tastes so much nicer when you know it has played an important part in the building of your railway.
